Culinary Arts Professional (CAP) Program
Why CAP program?
If you've ever thought about owning or managing a restaurant, the Culinary Arts Professional program at the Institute of Technology in California can give you the skills to start down that path. During this program, you’ll discover what it takes to manage and operate a restaurant, as well as gain a thorough understanding of American regional cuisine, Asian cuisine, and culinary knife skills.

Once you complete the Culinary Arts Professional Associate of Occupational Science (AOS) degree program at Institute of Technology, you will have the skills, knowledge, and experience that will qualify you to launch your real career as a professional chef, dessert specialist, catering manager, restaurant manager, or food and beverage manager. Plus, you will have met the American Culinary Federation Certification Standards for Supervisory Management and Nutritional Training, and have gained certifications in ServSafe Food Protection and ServSafe Responsible Alcohol Service from the National Restaurant Association.
Institute of Technology's Culinary Arts Professional AOS degree program builds on the Culinary Arts Specialist program, offering more than twice as much classroom training and academic time. In addition to developing your knowledge of the concepts, preparation, and basic skills in the classroom, we give you hands-on experience with a 180-hour externship at a fine dining establishment – the perfect conclusion to our extensive program.
Through your application of the program's materials, you will develop professionally and gain the confidence you need to survive the heat of the kitchen.
